Ingredients
  

For the chicken salad

  • 2 cups cooked chicken, shredded
  • 1 ripe avocado mashed
  • 1/4 cup plain Greek yogurt
  • 1 tablespoon Dijon mustard
  • 1 tablespoon lemon juice
  • Salt and pepper to taste
  • 1/4 cup diced celery
  • 1/4 cup diced red onion

For wrapping

  • Lettuce leaves For wrapping the chicken salad

Preparation

  • In a large bowl, combine the shredded chicken, mashed avocado, Greek yogurt, Dijon mustard, and lemon juice. Mix well.
  • Add the diced celery and red onion; stir to combine.
  • Season with salt and pepper to taste.
  • Spoon the chicken salad mixture onto the lettuce leaves and wrap them up.

Serving

  • Serve immediately and enjoy on a plate. Pair with fresh fruit or veggie sticks for a complete meal.

Notes

Best enjoyed fresh, but if you have leftovers, store the chicken salad mixture in an airtight container in the fridge for up to two days. Keep lettuce leaves separate until ready to eat to prevent sogginess. Use rotisserie chicken for convenience and feel free to customize with more veggies like bell peppers or cucumbers.
