Ingredients
  

For the Marinade

  • 1 pound chicken breast, cut into chunks
  • 1/2 cup peanut butter
  • 1/4 cup soy sauce
  • 1/4 cup honey
  • 1 tablespoon sriracha (or to taste)
  • 1 tablespoon lime juice
  • 1 tablespoon vegetable oil
  • Salt and pepper to taste
  • Skewers Soak wooden skewers in water for 30 minutes to prevent burning.

Preparation

  • In a bowl, whisk together peanut butter, soy sauce, honey, sriracha, lime juice, vegetable oil, salt, and pepper to create the marinade.
  • Add chicken pieces to the marinade, cover, and let it sit in the refrigerator for at least 30 minutes.

Cooking

  • Preheat grill or grill pan to medium-high heat.
  • Thread marinated chicken onto skewers.
  • Grill skewers for about 10-15 minutes, turning occasionally, until chicken is cooked through.
  • Serve warm with any remaining marinade as a dipping sauce.

Notes

For added flavor, let the chicken marinate longer, even overnight. Adjust the spiciness by adding more or less sriracha according to your taste.
