Ingredients
  

Cookies

  • 1 cup unsalted butter, softened
  • 3/4 cup brown sugar
  • 3/4 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 2 large eggs
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup chocolate chips
  • 1 cup fresh cherries, pitted and chopped Alternatively, can use frozen cherries.

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a large bowl, cream together the softened butter, brown sugar, and granulated sugar until the mixture is smooth.
  • Beat in the vanilla extract and then add the eggs one at a time, mixing well after each addition.
  • In another bowl, combine the all-purpose flour, baking soda, and salt.
  • Gradually add the dry mixture to the creamed mixture and stir until just combined.
  • Fold in the chocolate chips and chopped cherries until evenly distributed.

Baking

  • Drop rounded tablespoons of the dough onto ungreased baking sheets, spacing them about 2 inches apart.
  • Bake the cookies in the preheated oven for 10-12 minutes, or until the edges turn golden.
  • Allow the cookies to cool on the baking sheets for a few minutes, then transfer them to wire racks to cool completely.

Notes

Store cookies in an airtight container at room temperature for about a week. For long-term storage, freeze the baked cookies in a freezer-safe bag. Thaw at room temperature or warm them up in the oven before serving.
