Instructions
 

Preparation

  • In a large pot, heat olive oil over medium heat.
  • Add diced onion, minced garlic, diced carrots, and diced celery. Sauté until the vegetables are tender.
  • Pour in the chicken broth and bring it to a boil.
  • Add the gnocchi and cook according to package instructions.
  • Stir in shredded rotisserie chicken, spinach, Italian seasoning, salt, and pepper.
  • Reduce the heat and mix in heavy cream.
  • Serve warm in bowls.

Notes

Store any leftovers in an airtight container in the fridge for up to three days. Reheat by adding a splash of water or broth.
