  • 8 ounces Spaghetti
  • 1 lb Cooked chicken (shredded)
  • 1 cup Burrata cheese (torn into pieces)
  • 1 cup Cherry tomatoes (halved)
  • ¼ cup Pine nuts (toasted)

Flavorings

  • 4 tablespoons Butter
  • 4 cloves Garlic (minced)
  • 1 whole Lemon (juiced and zested)
  • to taste Salt and pepper

Garnish

  • to taste Fresh basil or parsley (optional) For garnish

Instructions
 

Preparation

  • Bring a large pot of salted water to a boil and add your spaghetti. Cook according to package instructions until al dente.
  • Drain the spaghetti and set aside. Optional: Toss with a little olive oil to prevent sticking.

Cooking

  • In a big skillet, melt the butter over medium heat. Add minced garlic and sauté for about a minute until fragrant.
  • Add shredded cooked chicken to the skillet, season with salt and pepper, and stir to combine.
  • Squeeze lemon juice into the pan and add lemon zest. Stir to mix well.
  • Add the cooked spaghetti to the skillet with the chicken and toss to coat.
  • Fold in halved cherry tomatoes gently.
  • Place torn burrata cheese on top of the pasta.
  • Toast pine nuts in a separate small pan over low heat until golden brown.

Serving

  • Scoop the chicken spaghetti into bowls. Top with toasted pine nuts and garnish with fresh basil or parsley.

Notes

For extra flavor, add fresh herbs like rosemary. Use leftovers within three days, reheating with a splash of water.
