  • 4 pieces cod fillets Use fresh for best flavor.
  • 2 tablespoons olive oil For cooking the cod.
  • 1 cup cherry tomatoes, halved Adds sweetness and flavor.
  • 2 tablespoons butter For the sauce.
  • 1 pieces lemon, juiced Adjust according to taste.
  • 2 cloves garlic, minced Enhances the flavor.
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions
 

Cooking

  • Heat olive oil in a skillet over medium heat.
  • Season cod fillets with salt and pepper, then add them to the skillet. Cook for about 3-4 minutes on each side until golden and cooked through.
  • Remove the cod from the skillet and set it aside.
  • In the same skillet, add garlic and sauté for 1 minute.
  • Add cherry tomatoes and cook until soft.
  • Stir in butter and lemon juice, cooking until blended.
  • Return the cod to the skillet and spoon the sauce over it.
  • Garnish with fresh parsley and serve immediately.

Notes

Best served hot with rice, pasta, or crusty bread. Leftovers can be stored in an airtight container for up to 2 days.
