Easy Chicken and Gravy

Ingredients
  

For the chicken

  • 1 lb chicken breasts Can substitute with chicken thighs for more flavor.
  • 1/2 tsp salt To season the chicken.
  • 1/2 tsp pepper To season the chicken.
  • 1 tsp garlic powder To season the chicken.

For the gravy

  • 3 tbsp butter To melt in the skillet.
  • 3 tbsp flour Used to thicken the gravy.
  • 2 cups chicken broth Main liquid for the gravy.
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 1/2 tsp oregano
  • 1/2 tsp thyme
  • 1 tsp paprika
  • 1 tsp onion powder
  • 1 tsp garlic powder Additional seasoning for the gravy.

Instructions
 

Preparation

  • Cut chicken breasts in half lengthwise to make them thinner.
  • Season the chicken with salt, pepper, and garlic powder.

Cooking

  • In a skillet over medium-high heat, melt 3 tbsp of butter.
  • Once the butter has melted, add 3 tbsp of flour and stir continuously until well combined. Cook for a few minutes while stirring.
  • Add 2 cups of chicken broth and stir well.
  • Season with salt, pepper, oregano, thyme, paprika, onion powder, and garlic powder. Stir until it starts bubbling.
  • Add the chicken to the skillet, making sure it is covered in the gravy.
  • Cover with a lid, and turn the heat down to medium-low.
  • Let this cook for 12-15 minutes or until the chicken reaches an internal temperature of 165 degrees.
  • Shred the chicken and serve over mashed potatoes. Enjoy!

Notes

Store any leftovers in an airtight container in the fridge for 3-4 days. To reheat, warm it on the stove over low heat or in the microwave. You can adjust the thickness of the gravy by adding more or less chicken broth. Adding a pinch of cayenne pepper or hot sauce gives it a spicy kick.
