Ingredients
  

Main Ingredients

  • 1 lb ground beef or turkey
  • 1 can black beans, drained and rinsed
  • 1 cup corn, frozen or canned
  • 1 packet taco seasoning
  • 1 can diced tomatoes with green chilies
  • 2 cups tortilla chips
  • 2 cups shredded cheese (cheddar or Mexican blend)

Optional Toppings

  • sour cream
  • avocado
  • cilantro

Instructions
 

Preparation and Cooking

  • Preheat the oven to 350°F (175°C).
  • In a skillet, cook the ground beef or turkey over medium heat until browned. Drain any excess fat.
  • Stir in the black beans, corn, taco seasoning, and diced tomatoes. Cook for 5 minutes until heated through.
  • In a baking dish, layer half of the tortilla chips, then half of the meat mixture, and then half of the cheese. Repeat the layers.
  • Bake in the preheated oven for 20-25 minutes, until the cheese is melted and bubbly.
  • Serve hot with optional toppings.

Notes

For a vegetarian version, skip the meat and use an extra can of black beans or add additional vegetables like bell peppers or zucchini. Experiment with different cheeses and add spices or jalapeños for extra heat.
