  • 1 package 15 bean medley Rinsed and soaked
  • 1 Onion, chopped
  • 2 Celery stalks, chopped
  • 2 Carrots, chopped
  • 1 can Diced tomatoes
  • 6 cups Vegetable broth
  • 1 tsp Garlic powder
  • 1 tsp Cumin
  • Salt and pepper to taste

For serving

  • Corn muffins For serving with the soup

Preparation

  • Begin by rinsing your 15 bean medley under cool water. Soak them overnight or for a few hours.
  • In a large pot, heat olive oil over medium heat. Sauté chopped onion, celery, and carrots until tender.

Cooking

  • Add the soaked and drained beans to the pot with the sautéed vegetables.
  • Pour in the diced tomatoes and vegetable broth.
  • Season with garlic powder, cumin, salt, and pepper. Stir everything together.
  • Bring the mixture to a gentle boil.
  • Reduce the heat to low, cover the pot, and let it simmer for about 1 to 2 hours.
  • Check for doneness to ensure beans are tender but not mushy.
  • Ladle the soup into bowls and serve hot with corn muffins.

Notes

You can add fresh herbs like rosemary for extra flavor. Leftovers can be stored in an airtight container for 3-5 days.
