Salad Ingredients

  • 4 cups Mixed greens Choose fresh and crisp greens for the best taste.
  • 1/2 cup Toasted walnuts Toast the walnuts lightly to enhance their flavor.
  • 1/2 cup Dried cranberries
  • 1/2 cup Crumbled feta cheese You can substitute with goat cheese if preferred.

Vinaigrette Ingredients

  • 1/4 cup Olive oil
  • 1/4 cup Orange juice
  • 1 tbsp Honey Adjust the sweetness as desired.
  • 1 tbsp Dijon mustard
  • 1/2 tsp Salt
  • 1/4 tsp Pepper

Preparation

  • In a large bowl, combine mixed greens, toasted walnuts, dried cranberries, and crumbled feta cheese.
  • In a separate bowl, whisk together olive oil, orange juice, honey, Dijon mustard, salt, and pepper to make the vinaigrette.
  • Drizzle the vinaigrette over the salad and toss gently to combine.
  • Serve immediately.

Notes

Store leftovers without vinaigrette to keep greens from getting soggy. Best enjoyed fresh, can be served as a side dish or light main meal. Serve with toasted bread or pita chips for added crunch.
