  • 1 cup brown sugar, packed
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract

Dry Ingredients

  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon Don't skip the cinnamon; it adds a warm flavor to the cookies.

Mix-Ins

  • 3 cups rolled oats
  • 1 cup raisins Feel free to substitute chocolate chips or dried cranberries for variations.

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a bowl, cream together the softened butter, brown sugar, and granulated sugar until smooth.
  • Beat in the eggs one at a time, then stir in the vanilla.
  • In another bowl, whisk together the flour, baking soda, salt, and cinnamon. Gradually blend this into the creamed mixture.
  • Stir in the oats and raisins.
  • Drop by rounded spoonfuls onto ungreased baking sheets.
  • Bake for 10 to 12 minutes, or until golden brown.
  • Let cool on wire racks.

Notes

Oatmeal Raisin Cookies can be served warm right out of the oven or at room temperature. They are great by themselves or can be paired with a glass of milk or your favorite hot beverage. To keep your oatmeal raisin cookies fresh, store them in an airtight container at room temperature for about a week. If you want to keep them longer, freeze them for up to three months.
