Preparation

  • In a medium saucepan, combine sugar, water, and cream of tartar. Cook over medium heat, stirring until sugar is dissolved.
  • In a large mixing bowl, beat the egg whites until soft peaks form.
  • Gradually pour the hot sugar mixture into the egg whites while continuously beating until stiff peaks form and the frosting is glossy.
  • Stir in the vanilla extract.
  • Use immediately to frost your favorite cake.

Notes

This frosting is best served immediately, as it tends to lose its fluffiness over time. If you have any leftovers, you can store them in an airtight container in the fridge for a short time. Before using it again, you may need to re-whip it to restore its light and fluffy texture.
