  • 2 cups mixed greens or romaine lettuce Perfect for a crisp base.

For the Dressing

  • 3 tablespoons olive oil Good quality makes a difference.
  • 2 tablespoons lemon juice Brightens the dish with acidity.
  • 1 teaspoon honey Adds a hint of sweetness.
  • 1/2 teaspoon Dijon mustard Adds depth to the dressing.

Instructions
 

Preparation

  • Preheat the oven to 400°F (200°C).
  • In a large mixing bowl, toss the cauliflower florets with the olive oil, smoked paprika, cumin, salt, and pepper.
  • Spread the seasoned cauliflower on a baking sheet in a single layer and roast for about 20-25 minutes.
  • While the cauliflower is roasting, cook pearl couscous according to package directions, approximately 8-10 minutes. Drain and set aside.
  • In a small bowl, whisk together olive oil, lemon juice, honey, Dijon mustard, and salt and pepper for the dressing.
  • Chop parsley and slice red onion while waiting for the cauliflower and couscous.
  • In a large bowl, layer mixed greens, cooked couscous, roasted cauliflower, golden raisins, red onion slices, and fresh parsley.
  • Drizzle dressing over the top and toss gently to combine.
  • Taste and adjust with salt, pepper, or more lemon juice as needed.
  • Serve immediately.

Notes

Let the salad sit for about 10 minutes after mixing for best flavor. For a kick, add red pepper flakes to the seasoning mix.
