Ingredients

  • 1 can canned salmon (14.75 oz, drained and flaked)
  • 1/2 cup breadcrumbs Can be substituted with crushed crackers or oats.
  • 1/4 cup green onions (chopped)
  • 1/4 cup bell pepper (diced)
  • 2 eggs (beaten)
  • 1 tsp Dijon mustard
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/2 tsp garlic powder
  • Enough to coat the skillet oil (for frying)

Preparation

  • Open the canned salmon and drain it well. Flake it with a fork.
  • While the salmon is draining, gather all your ingredients together.
  • In a big mixing bowl, combine the flaked salmon, breadcrumbs, chopped green onions, and diced bell pepper.
  • Add the beaten eggs, Dijon mustard, salt, black pepper, and garlic powder to the mixture. Mix until fully combined.
  • Shape the mixture into round patties, about 2-3 inches in diameter.
  • In a large skillet, pour enough oil to coat the bottom and heat over medium heat until hot.

Cooking

  • Carefully add salmon patties to the skillet, ensuring not to overcrowd the pan.
  • Cook for about 4-5 minutes on each side, until golden brown and crispy.
  • Remove the patties from the skillet and drain on paper towels.
  • Serve warm, optionally with remoulade or tartar sauce.

Notes

Make sure the oil is hot enough before adding the patties for a perfect golden crust. Leftover salmon works perfectly in this recipe. Store leftovers in an airtight container for up to three days.
