Ingredients
  

For the potato mixture

  • 2 pounds potatoes Choose starchy potatoes like Russets for best texture.
  • 1 cup sour cream Greek yogurt can be used as a lighter option.
  • 1/2 cup milk
  • 1 cup shredded cheddar cheese You can substitute with your favorite cheese.
  • 1/2 cup cream cheese
  • 1/4 cup chopped green onions Additional for garnish suggested.
  • 1 teaspoon garlic powder Essential for flavor, do not skip.
  • Salt and pepper To taste.

For the topping

  • 1 cup breadcrumbs Panko bread crumbs can be used for extra crunch.
  • 1 tablespoon butter, melted For mixing with breadcrumbs.

Instructions
 

Preparation

  • Preheat your oven to 375°F (190°C).
  • Boil the potatoes until tender. Drain and let them cool slightly.
  • Peel and mash the potatoes in a large bowl.
  • Stir in sour cream, milk, cheddar cheese, cream cheese, green onions, garlic powder, salt, and pepper until well combined.
  • Transfer the potato mixture to a greased baking dish.

Topping

  • In a separate bowl, mix the breadcrumbs with melted butter. Sprinkle this mixture over the potato mixture.

Baking

  • Bake for 25-30 minutes or until the top is golden and crispy.
  • Allow the casserole to cool slightly before serving.

Notes

To store leftovers, let the casserole cool completely and cover tightly. It will stay fresh for up to 3-4 days. You can freeze before baking.
