Ingredients
  

Beans and Broth

  • 1 lb White Beans canned or dried
  • 4 cups Chicken or Vegetable Broth

Meat

  • 1 lb Cooked Ham diced

Vegetables

  • 1 Onion chopped
  • 2 Carrots diced
  • 2 stalks Celery diced
  • 2 cloves Garlic minced

Seasoning

  • 1 leaf Bay Leaf
  • 1 tsp Thyme
  • Salt and Pepper to taste

Oil and Garnish

  • 2 tbsp Olive Oil
  • Chopped Parsley for garnish (optional)

Instructions
 

Preparation

  • Soak the beans (if using dried) overnight in a bowl covered with water.
  • Prep the ham by chopping it into bite-sized pieces.
  • Chop the onion, carrots, and celery.

Cooking

  • In a large pot, heat the olive oil over medium heat and sauté the onion, carrots, and celery for about 5-7 minutes until softened.
  • Add the garlic and thyme, stirring for about a minute.
  • Combine the diced ham, soaked (or canned) beans, and the broth in the pot and bring to a simmer.
  • Season with bay leaf, salt, and pepper, tasting and adjusting seasoning as needed.
  • Allow the soup to simmer for about 30-40 minutes.
  • Remove the bay leaf before serving the soup in bowls, garnished with chopped parsley if desired.

Notes

This soup is versatile; you can use turkey instead of ham or add fresh herbs to enhance the flavor. Leftovers taste even better the next day!
